Make Your Own Peppermint Syrup

So, this week I've been drinking peppermint mochas at home (using Amy's recipe HERE).  I didn't have any peppermint syrup at home, so I needed to make it!  Making this simple syrup is as easy as can be!

  1. Mix 1 cup sugar and 1 cup water in a small saucepan.  Bring the mixture to a boil.
  2. Once boiling, reduce heat to medium and stir until all of the sugar is dissolved.
  3. Turn off the heat and stir in 2 teaspoons peppermint extract.
  4. Cool at room temperature.  Store syrup in an airtight container in the fridge.
I use 2 TBS of this syrup in my peppermint mochas and it is so tasty!  You can do this recipe with any extract flavor.  I am almost out of both my vanilla, hazelnut, and almond syrups (of course, they all run out at the same time-annoying!).  I will be trying some new syrups soon.  The best part about these, as compared to store bought is that there are no preservatives!  Yay!
