So, this week I've been drinking peppermint mochas at home (using Amy's recipe HERE). I didn't have any peppermint syrup at home, so I needed to make it! Making this simple syrup is as easy as can be!
- Mix 1 cup sugar and 1 cup water in a small saucepan. Bring the mixture to a boil.
- Once boiling, reduce heat to medium and stir until all of the sugar is dissolved.
- Turn off the heat and stir in 2 teaspoons peppermint extract.
- Cool at room temperature. Store syrup in an airtight container in the fridge.
